The residents of Jemez
Springs--and those who pass through in all seasons to enjoy the beauty
of the canyon walls, the singing and steaming waters, and the ascent to
the Valle Grande and the summits of the Jemez Range-- are blessed to
have The Laughing Lizard at the heart of the village. The Lizard is a
restaurant of singular merit: Elsie MacKinnon, proprietor and chef extra
ordinaire, has made it an institution of good food and good will. Thanks
to Elsie, the establishment has an Irish aura, that is to say, it is a
house of music and storytelling, with a tip of the hat
to the literary and visual arts. It is a place of congeniality and
inspiration.
The menu is ever imaginative and enticing. The coffee, Elsie’s special
and secret blend, is just right, and the desserts are the best in a
hundred country miles. Anyone who has breakfasted, lunched, or supped
there, as I have on many happy occasions, is bound to sing its praises.
